The Maille Boutique in London: Pairing Mustard & Canapes…

The opening of the Maille London boutique in the Piccadilly arcade wasn’t notable just for its interesting guests, plentiful Champagne and opportunity to dip endless breadsticks in their delectable Black Truffle and Chablis mustard.

There was also the cocktail dinatoire menu from Parisian caterers Potel et Chabot. For the anglophones amongst us, that translates as an entire dinner menu in perfect canape form.

The cleverness of it was that they managed to include various of the Maille mustards, vinegars and the legendary cornichons in each mouthful.

The first platter I homed in on was the Oeuf de caille truffe a la moutarde a la truffe, or quails eggs with truffle mustard. These were possible my favourite, especially as the yolks were cooked mollet, half way between runny and cooked. Tricky to get right, but unctuously perfect with the mustard, and a combination I am definitely trying myself.

The Radis a la moutarde au miel and the Pince cornichons Maille et comte. The first was a very clever play on the traditional radish and butter combination, and carrot and cheese wrapped cornichons (it does sound – and look better in French!)

I then got distracted by the fresh mustard pumps. Truffle mustard on tap…

Then I was back to the canapes. These were delicious: poitron avec moutarde au miel. (Squash with honey mustard.)

Champignons a la moutarde au parmesan. Raw mushrooms with mustard

Fourchette de gambas a la moutarde mangue epicee. (Prawns with spiced mango mustard.)

Vague fruits rouges au vinaigre de fruits rouges. (Tiny red berry tarts, with red berry vinegar.)

I finished my evening by popping a tarte coulante caramel mangue au vinaigre a la mangue in my mouth before floating home. (Warm caramel tart with mango vinegar.)

For those of you who don’t know yet which is their favourite mustard, there is a permanent tasting station in store so you can try all the different flavours in the London boutique.
