Sometimes you just can’t beat simplicity for a late weekend breakfast. And in this case I’m talking about free range Cotswold Legbar eggs – the blue-shelled ones, sprinkled with Maldon salt and eaten with thick slices of organic seedy bread, slathered with salty Irish butter.

The key is to have the freshest, and best ingredients that you can lay your hands on. Look at the orange of those yolks: perfection.  Just add strong coffee and the newspapers…

I love Free Range eggs. I live in the country, and am able to always buy them from peoples house 🙂 sooooo local too

Crazy, I had pretty much the same breakfast… poached Cotswold Legbars with seeded toast! It rocked!

They really are the best eggs around… it’s a shame that Tesco don’t stock them anymore!
