On Thursday afternoon, when I get back from Moscow I am going to be doing a lot of baking. That’s because I am delivering a whole car load of sweet treats to Maiden in Shoreditch for a Japanese Red Cross cake fundraiser being held there on Friday. I’m thinking jasmine tea cupcakes, sesame sugar crisps, and maybe some ginger cookies too.

I know how many of you love cake, so if you are in the area please drop by to buy some cakes (& cookies too) and help raise as much money as possible.

“Cakes for Japan is a pop-up sushi inspired cake shop raising funds for the Red Cross following the devastating events in Japan.

Professional and amateur cake makers from all over London are donating edible goodies which will be sold at Maiden, on 188 Shoreditch High Street on Friday 18th March. 100 percent of all money taken is being donated to charity.

Cakes for Japan are encouraging as many people as possible to host their own Cakes for Japan events around the world so please do host your own event no matter how small, it ALL helps!”

This seems like a great (and delicious!) way to raise money for such an important cause. If only I were in London. I saw you mention your jasmine tea cupcakes on Twitter the other day and have been thinking about them ever since. I’ve been doing a lot (well, a little, but “a lot” for me) of baking recently; it’d be great if I could put it to good/worthwhile use. I’ll have to see if there are any similar events in NY. That apple and hazelnut cake looks delicious as well — I’ll definitely be looking into the recipe!

If I were in London I would stop by, buy some cakes, and give you a hug for doing this. I’m very fortunate that my family and friends haven’t been directly affected by this disaster, but my heart is broken for the many who have… praying that no one suffers more than they already have. Love to you.
